Quinoa, especially rich in protein, was the main food source of the Incas up to the invasion of their territory in the sixteenth century by the Spaniards who banned its cultivation.

This prohibition has failed cause the total disappearance of quinoa, but fortunately some families attached to traditions have managed to maintain the plots cultivated during all these centuries of prohibition.
